Cinco de Mayo Dip: Kale Guacamole

Not only is Cinco de Mayo this weekend, but the Kentucky Derby is on Saturday as well. With that being said, I know I’ll be consuming a number of drinks and not-so-great food. But, I thought I could at least contribute a dish that was really delicious and pretty healthy – Kale Guacamole. I got this recipe from my good friend, Lisa Consiglio-Ryan (of Whole Health Designs). Ingredients:

  •  1 bunch kale
  • 2 garlic cloves, minced
  • 4 ripe avocados, flesh removed
  • 1 small red onion, diced finely
  • 1 medium tomato
  • 2 tbsp lime juice
  • Sea salt and pepper

Directions:

  • Peel the garlic
  • In a food processor, chop kale leaves and garlic
  • Dice onion and tomato
  • Mash avocado in a bowl
  • Add avocado to the onion and tomato combo and mix together
  • Add the garlic and kale mix to the avocado mix
  • Add lime juice
  • Add sea salt and pepper to taste
