Not only is Cinco de Mayo this weekend, but the Kentucky Derby is on Saturday as well. With that being said, I know I’ll be consuming a number of drinks and not-so-great food. But, I thought I could at least contribute a dish that was really delicious and pretty healthy – Kale Guacamole. I got this recipe from my good friend, Lisa Consiglio-Ryan (of Whole Health Designs). Ingredients:
- 1 bunch kale
- 2 garlic cloves, minced
- 4 ripe avocados, flesh removed
- 1 small red onion, diced finely
- 1 medium tomato
- 2 tbsp lime juice
- Sea salt and pepper
Directions:
- Peel the garlic
- In a food processor, chop kale leaves and garlic
- Dice onion and tomato
- Mash avocado in a bowl
- Add avocado to the onion and tomato combo and mix together
- Add the garlic and kale mix to the avocado mix
- Add lime juice
- Add sea salt and pepper to taste
